Last week for Litha, our Summer Solstice celebration, we made this beauty! In a nostalgic old school kind of feel, this pie is capturing the essence of summer. It reminds me of the “good ole days”… those summer days where we would be splashing in the Walmart edition pool momma set up for us – we thought (and I still do) it was the best thing ever! Or playing in the creeks, wandering around the yard, making up games and using our imagination to create a magical day out of honestly nothing. To us it was everything. Summer is a magical time as much as I don’t want to admit it. It is. Summer nights are stunning as the fireflies dance the night away, and the sunsets are quite spectacular. Summer mornings are a strange mix of humid breezes and warm sunlight filtering through the vibrant canopy above. These warm days are fleeting and feel quite nostalgic. Our Lemonade Pie captures exactly that, and I hope it brings up happy memories along with a little happy dance.

Ingredients
- 8 ounce container of cool whip (I found Simple Truth Brand)
- 6 ounce frozen concentrate lemonade
- 14 ounce can sweetened condensed milk
- 1 9 inch graham cracker pie crust
Directions
- In a bowl, combine the cool whip, lemonade concentrate, and the sweetened condensed milk. Whisk well until all are incorporated. Pour the mixture into the graham cracker crust and freeze for a good 2 to 3 hours. Slice and serve. 8 slices
Notes
- Simple Truth is the brand I used for both the sweetened condensed milk and cool whip
- Next time I will be making the whip cream from scratch.
- Walmart brand of frozen lemonade concentrate had the best ingredient list with no High Fructose Syrup.
- I used a gluten free graham cracker crust.
- My recipe overfilled the crust, so, I poured the remaining filling in a bowl, popped it in the freezer for the 2 to 3 hours. It set up nicely and everyone enjoyed it as ice cream.
